Homemade Granola

December is such a busy time for everyone! Holiday party’s, shopping to do, making Christmas goodies, school concerts, the list goes on! So it’s no wonder that we don’t eat the best this time of year!
Decembers’ issue of the Alive magazine had a recipe for homemade simple granola that’s perfect for snacking on the run! I have a dish in my car at all times. It’s so simple AND it tastes like those Ferraro chocolates..mmmmmm. Also, perfect for Christmas gifts!

You will need:

3 cups rolled oats. 1/2 cup chopped walnuts
1/2 tsp sea salt. 1/2 tsp cinnamon
1/3 cup vanilla 1/3 cup hemp hearts
1/2 cup melted coconut oil. 1/2 cup maple syrup
1/2 cup chopped hazelnuts. 1/4 cup shredded coconut
1/4 cup each of cocoa nibs and dried cranberries

Mix together oats, walnuts, cinnamon, hemp, and salt. In separate bowl, mix together vanilla, coconut oil, and maple syrup, then add to dry mixture. Bake at 350 for 15 minutes. Remove, stir up the oats and add the hazelnuts and coconut. Bake for another 20 minutes, then remove and add cranberries and cocoa nibs. Let cool and enjoy!

so simple, so tasty, and packs quite a punch of fiber and protein!

Happy Holidays!
