Buckwheat Pancakes (GF)

Day 3 of my 10 day SPRING CLEANSING detox and going strong!! But today I’m faced with the toughest test there is, dinner with my family. YIKES! We eat a pretty good diet most of the time (75-25 rule) but chances are I won’t be able to eat most of the food that gets made tonight. Bummer right? However, I’m sticking to my guns and bringing along a dish that we ALL can eat.

Breakfast for day 3 consisted of Buckwheat pancakes. YUM. Buckwheat is a gluten free flour that doesn’t require any binder substances and is very filling.

Buckwheat Pancakes
ingredients
2 cups whole grain buckwheat flour
22 grams of plant based protein powder
1 cup water
1/2 cup organic coconut oil
1 tsp vanilla extract
1 cup frozen berries
1 medium banana

directions
In a blender, add water, protein powder, eggs, vanilla, berries, and banana and blend till smooth. Add flour to a large mixing bowl, mix in wet ingredients.
Use a greased frying pan, flip when bubbles begin to appear. Makes about 8 large pancakes. Top with a tiny bit of maple syrup.
