With all the snow storms we’ve had the past few weeks, I’ve been in the kitchen playing around with recipes. I’ve come across this flour less banana muffin recipe that is Gluten free and delicious!! It’s mixed in a blender so there’s little mess. But the best part about these muffins, they don’t taste like they’re GF!
2.5 cups GF rolled oats
1 cup plain Greek yogurt
1.5 tsp baking powder
1/2 tsp baking soda
1/2 cup cane sugar (or sweetener or your choice)
2 ripe bananas
1/2 tsp nutmeg
1 tsp pure vanilla
2 free range eggs
Chopped walnuts for garnish (optional)
Preheat oven to 400 F. Place all ingredients in a blender, starting with liquids first, and blend until oats are smooth. Add the oats a cup at a time. Line or grease 12 muffin tins. Bake for 15-20 minute or until toothpick comes out clean.
I think next time I’ll try adding some coconut flakes. Enjoy!!!
